What Makes Spiced Coffee Special
A Robusta Grown In Volcanic Mexican Soil
While we were limited in our choices back home in Senegal, being in Texas allows us access to a much wider range of beans. Our current Robusta for example is grown and hand-picked in Chiapas, Mexico, renowned for its lush rainforests and rich volcanic soil. This unique environment naturally produces an exceptional coffee bean, which is key in enhancing the spiced coffee experience.
A Dried Fruit With Healing Properties
Grains of Selim (Xylopia aethiopica) are the aromatic seeds of an African tree's fruit. They are widely used as a spice thanks to their distinctive smoky flavor with notes of nutmeg and clove. You'll often find them crushed up in soups and stews, or roasted with coffee (like in Senegalese café Touba) Besides making food and coffee taste good, grains of Selim have also been used in traditional West African medicine.
